During this period, it is important that everyone stays home as much as possible. While travelling seems beyond reach, the Singapore Tourism Board wants you to experience VisitSingapore by sharing locally inspired cocktail recipes that you can recreate at home.
Today’s recipe in our stay home series is a Kaya Toast Cocktail inspired by a drink from Bitters and Love. In our own rendition of the cocktail, we have used kaya, which is a traditional jam made from pandan, coconut and eggs. This olive-green jam most known as a spread on toast for a truly authentic Singaporean breakfast (the link to our kaya toast recipe below). Also in the mix are the Gula Melaka or known as palm sugar, and coconut cream. For this recipe, we will also be using the Dark Rum from Compendium, a homegrown distillery that produced the first and only rum made in Singapore.
Serve this cocktail with a slice of Kaya Toast on the side perfect for an afternoon tea. Cheers and we hope to see you when it’s safe to travel again!

Ingredients:
45ml Dark Rum
2 bar spoon Kaya
20ml Gula Melaka Syrup
20ml Coconut Cream
Pandan Leaf
Steps:
1. Add Dark Rum, Kaya, Gula Melaka syrup and coconut cream into a shaker. Froth/stir and taste.
2. Add ice into a rocks glass. Add ice into the shaker, shake for 8-10 seconds. Strain into rocks glass with ice.
3. Garnish with pandan leaf and kaya toast on the side.

The alcoholic Haribo Gold Bears we made before were so pretty, this time we made a Haribo fruit cocktail for a no-bake cheesecake topped with imitation fruit. But there was a problem! The parts of the cake with the gummies were very elastic and difficult to cut. (The next morning, we were able to cut the pineapple and cherry, and then eventually the apple and tangerine.) It might help to cut it with a warm knife...? So, we made a cherry-only cake that would be easy to cut. Use it as a reference. (In the video, we made seven cherries, but when we cut it one slice was a bit large, so we recommend using eight.)
After you put them on the cake, the gummies keep absorbing moisture and swelling. They get more and more indistinguishable, but watching them change might be part of the fun. If you use this recipe, the bottom is 7 mm. The cheesecake is 19 mm. The gelatin is 7 mm. The gummies have a nice fruity flavor.
*Recipe*(one 18 cm round pan)
1. Separate out your favorite gummies and lay them out. Soak in whatever liquid you like. This time we used apple juice.
2. Finely crush nine biscuits (84g).
3. Mix 2 with 40g melted unsalted butter.
4. Tightly press 3 down flat into a pan with a removable bottom. Cool in the fridge.
5. Sprinkle 8g powdered gelatin into 3 tbs water and let soak.
6. Soften the cream cheese 200g by returning it to room temperature or heating it in the microwave ~30 seconds. Stir until creamy and smooth.
7. Stir 70g of sugar into 6.
8. Add about a third of the cream 200ml to 7 and stir it in. Add another third and stir, then repeat with the final third.
9. Stir 2 tbs lemon juice into 8.
10. Heat 5 in the microwave for 30 seconds. Lightly stir it until the powder completely dissolves.
11. Stir 10 into 9.
12. Quickly strain 11 into 4.
13. Quickly even the top of 12 by dropping it from a slight height. Cool in the fridge ~30 mins.
14. Array the soaked gummies from 1 over the cake and return to the fridge. Save the liquid they were steeped in.
15. Strain the liquid from 14 through a tea strainer or similar.
16. Set aside 3 tbs of 15 and sprinkle in 3g gelatin. let sit for ~3 mins.
17. Add more of your liquid to 15 until it's at 150 ml. Bring to room temperature.
18. Microwave 16 for 30 seconds and gently stir until completely dissolved.
19. Stir 18 into the room-temperature 17.
20. Pour 19 over 14. If you completely submerge the gummies, their color will dim, so it's cute to just have their heads poking out a bit.
21. Chill 19 in the fridge for 2-3 hours.
22. Wrap a steamy towel around and remove the cake from the outside of the pan.
23. Enjoy whole, or cut into pieces.
以前 作った、ハリボーゴールドベアーの洋酒漬けがあまりにもキレイだったので、今回はハリボーのフルーツカクテルを使って、なんちゃってフルーツなレアチーズケーキを作ってみました。しかし、このケーキには問題がぁ!ハリボーグミをのせた部分はとても弾力があるので切り分けが難しいんです。(作った翌朝には、パイナップルとさくらんぼが、翌々朝には、リンゴとミカンが切れるようになりました。)温めたナイフで切るとイイのかもしれませんが・・・? ということで、切り分けやすい、さくらんぼのみのケーキも作りました。 参考になさってください。(動画中では、さくらんぼを7個で作っていますが切り分けた時に1ピースが少し大きいので、8個で作ることをオススメします。)グミはレアチーズケーキにのせた後も水分を吸収してどんどん、ふくらみます。だんだんボヤッとした印象になりますが、変化を楽しむのもいいかもです。このレシピで作ると、ボトム 7ミリ。レアチーズケーキ部分 19ミリ。ゼリー部分 7ミリ。グミはその果物ぽい味がして、愉快です。

After hearing, "alcohol-infused Haribo bear gummies are delicious!", we gave it a try. We debated which liquor to use, then we finally decided on colorful Blue Curacao. The finished product is wiggly and shiny and very cute! But they have "adult" flavors. The outside is soft but the chewy texture remains in the center. It is a very peculiar food. When I videoed this, we infused Haribo's cola gummies with white run. We bought limes too, and was ready. The gummies completely dissolved after just one night. We wanted to make it like the Cuba Libre cocktail....so sad!
*Recipe*
1. Place Haribo Gold Bears in a plastic container. It is best to line them up without touching. They expand quite a bit.
2. Pour your liquor of choice to cover them completely. We used 200ml of BOLS Blue (Blue Curacao).
3. Let them infuse overnight for 16 hours. You can choose how long you want to infuse them, but by one week, the gummies will be too soft to hold!
ハリボーのくまさんグミを酒漬けにするとウマイ!と聞き、やってみました。どんな洋酒に漬けようか迷いに迷って、色がキレイなブルーキュラソーにしてみました。できあがりはプルプルでキラキラでかわいい!でも味はとっても大人、プニュプニュで中は歯ごたえが残っていて、不思議な食べ物です。ピックにさしてから漬ければパーティーシーンにも使えそうです。この動画を撮影した時に、ハリボーのコーラグミをホワイトラムで漬けてみました。ライムも買って準備OK。なのに、一晩漬けただけで溶けてしまいました。カクテルの“キューバ・リブレ”風にして楽しみたかったのに・・・残念でした!
*レシピ*
1.タッパーなどにハリボーゴールドベアーを入れる。くっつかないように並べるのがベスト。かなり膨らみます。
2.お好みの洋酒をひたひたに入れる。今回はボルスブルー(ブルーキュラソー
)を200ml入れました。
3.一晩漬ける。今回は16時間ほど漬けました。漬け具合はお好みですが、1週間するとトロトロになり、持ちあげられなくなってしまいますので、ご注意を!

このなめらかプリンをぜびお試しあれ!
材料
プリンカップ4個分
・牛乳 300cc
・生クリーム 50cc
・チョコレート 100g
・グラニュー糖 50g
・ココアパウダー 20g
・粉ゼラチン 5g
・水 大さじ2
(チョコレートソース)
・チョコレート 50g
・牛乳 大さじ2
・生クリーム 大さじ2
手順
1. チョコレートは粗く刻む
2. 鍋に牛乳を入れて温まったら沸騰する前に火を止め、水でふやかしたゼラチンを入れてよく混ぜる
3. チョコレート、ココア、グラニュー糖、生クリームを順に加えて都度よく混ぜる
4. 器に流し入れ、粗熱が取れたら冷蔵庫で2〜3時間程冷やし固める
5. 鍋に牛乳と生クリームを入れて火にかけ、ふつふつとしてきたら火を止める
6. チョコレートを加え、なめらかになるまでよく溶かす
7 粗熱が取れたらそのまま冷ます
8. 4に7をかけて完成
